Go ahead and take a refreshing dip into a healthy, delicious, plant-based bowl today! This Mermaid Smoothie Bowl is completely plant-based (vegan and vegetarian) and gluten-free. A touch of spirulina—a nutrient-packed, blue green algae–gives this smoothie bowl its pure ocean color and nutrition punch. I’m a fan of including algae, such as seaweed and spirulina, in the diet more often as a sustainable source of nutrition. In fact, I was asked to write an article on algae in the summer 2020 issue of Oprah Magazine, where I shared my tips for including more healthy foods from the sea in your diet. You can also check out my blogs on spirulina and seaweed for even more health information and cooking tips.

Just whip up these six simple ingredients and you’ll have a healthy, flavorful breakfast, mini-meal, or hearty snack ready in minutes. While you can enjoy this smoothie bowl right away, for best results, make it the day before and let it chill in the refrigerator overnight so the chia seeds gel in order to create a pudding-like, creamy texture.

Step-By-Step Guide:

Gather together all of your ingredients to make this recipe: Bananas, oranges, soymilk, spirulina, vanilla, spirulina, coconut, berries, and cocoa nibs.
You can find spirulina at most natural food stores and online.
Place bananas, orange, and chia seeds in the container of a small blender.
Add spirulina, plant-based milk, and vanilla to blender container.
Process just for a few seconds, until smooth and creamy.
Pour smoothie into a large individual bowl (about 2 cups). Garnish with shredded coconut, cocoa nibs, and berries. Chill until serving time (for best results, chill overnight). Enjoy!
