Coconut Cherry Chocolate Vegan Waffles


These crunchy, delicious Coconut Cherry Chocolate Vegan Waffles really pack in the nutrient power, thanks to a powerhouse of good ingredients, including coconut, cherries, dark chocolate, chia, and whole grain flour in the mix. Light in added sugars, salt, and fat, you can feel really good about this healthy vegan waffle recipe, which uses aquafaba (bean liquid) to obtain a light fluffy texture sans eggs. This waffle recipe is just as yummy for dessert, with a scoop of coconut ice cream, as it is for breakfast.

These chocolate waffles have just the right touch of dark chocolate chips in the mix, though you can add them on top for extra chocolate goodness! These healthy vegan waffles also rely on the flavor combo of cherry chocolate, which is one of my all time favorite pairings. Try serving these waffles with a topping of cherries (dried, fresh or canned), chocolate, and chopped nuts, if you like.

These crunchy, delicious Coconut Cherry Chocolate Vegan Waffles really pack in the nutrient power, thanks to coconut, cherries, dark chocolate and chia.



Instructions

  1. Place aquafaba and coconut palm (or brown) sugar in a mixing bowl and beat on high speed with an electric mixer for a few minutes, until it forms stiff peaks
  2. Gently fold in chia seeds, vanilla, coconut oil, and plant-based milk.
  3. Gently mix in coconut flour, whole wheat flour, baking powder, and salt (optional); stir only until well mixed—do not overstep.
  4. Gently stir in coconut, cherries, and chocolate chips.
  5. Preheat waffle iron and spray with non-stick cooking spray.
  6. Pour 1/4 of the batter (about 2/3 cup) onto the hot waffle iron and cook on high setting until golden brown and firm. Gently remove the waffle with a fork and spatula. The waffles are delicate, so make sure they are well cooked before removing.
  7. Repeat until batter is finished. Makes 4 waffles.
